A classic Italian whole muscle salami derived from the beef eye round. Marinated in Italian aromatics, orange and rosemary and a deep red wine finish. Fermented and Aged for six to eight weeks. Pairs with aged Cow’s milk and young Goats milk cheeses. Accompany this meat with deep red and medium bodied red wines for an amazing pairing.
